A Japanese inventor has created a machine that can supposedly age wine instantly, using electrolysis. Put simply, a large electrolysis chamber/container, filled with wine, gets shocked with electricity, thus allowing water molecules to fuse with the alcohol in seconds. Video after the break. Water and alcohol molecules "fusing" does not make wine. Water and wine molecule "fusing" does not make alcohol. Neither the article's text or the dubbing on the video makes any sense. There's either something else going on here completely or the whole video is a joke. Wine is a complex interaction of many organic substances, but the fundamental underlying process is biotics digesting fruit sugars in grape juice and turning them into alcohol. Other processes mellow the flavours while the wine is maturing. This can involve putting the wine into oak barrels (or industrially adding oak boards to stainless steel yanks) and letting the wood's characteristics meddle with the wine. Or it can involve blending different vats of product into a blended product.
