If I was the one who would've done it, I would've peeled all the color stickers from the cube and then put them back to "draw" Mario.
.. actually it might have been done that way (some stickers don't look as well aligned as the rest), but I guess we'll never know for sure.
One thing for sure is that its a very cool idea.

A quick count of the squares reveals that this uses 24 Rubik's Cubes. If you know how a Rubik's Cube works, as I'm sure this guy does, It wouldn't have taken longer than 1 and a half hours to design and create, assuming he had 24 cubes lying around.

I say he definitely did it for real - don't forget you only have to get one side looking right for each one, so it wouldn't be horrifically time consuming, and so there's little point in 'cheating'.
Looks great though, and an excellent idea.

Seriously, it only takes a few days to learn how to solve a rubik's cube. Once you know the patterns, then it's only a few steps to knowing how to place certain colours where. Not magic, or taking the cube apart. Taking 24 cubes apart and putting them back together would take longer than learning the patterns.
Although, I love the idea. Creative use of a useless (well, except at parties, I suppose) skill. Solving the cube is the smallest part of this, the image itself is impressive.
