Chipotle Autocado Robot Avocado Guacamole Prep
You’ve seen Chippy, now check out Chipotle’s new Autocado robot, developed in collaboration with Vebu, which can cut, core, and peel avocados faster than humans. These prepped avocados are then hand mashed to create the restaurant’s famous guacamole. It’s currently being tested at the Chipotle Cultivate Center in Irvine, California.

How does it work? An employee loads up Autocado with a full case of ripe avocados and then selects the size setting. The avocados are then vertically oriented one at a time before being transferred to the processing device. They are then sliced in half, with their cores and skin automatically removed. The bowl of prepped avocado can then be safely removed and moved to a counter where additional ingredients are added and for the hand mashing process. On average, it takes a human team around 50-minutes to make a batch of guacamole.

Chipotle Autocado Robot Avocado Guacamole Prep

We are committed to exploring collaborative robotics to drive efficiencies and ease pain points for our employees. The intensive labor of cutting, coring, and scooping avocados could be relieved with Autocado, but we still maintain the essential culinary experience of hand mashing and hand preparing the guacamole to our exacting standards,” said Curt Garner, Chief Customer and Technology Officer at Chipotle.
